A truly traditional Greek Salad is with ripe red tomatoes, crunchy cucumbers, green bell peppers, sweet red onions, Kalamata Greek olives, and creamy feta cheese. So how do we make a Greek Salad with vegan Feta? Enter the complete game changer when it comes to plant-based cheese… Tofu feta!! It’s hard to believe this feta is vegan when you first try it but it will change your plant-based world when you do. The opportunities are endless with this ingredient but this simple Greek salad is a perfect place to start. So fresh and tasty just on its own or pair it up with some crunchy sourdough bread or a side to any dish, super easy and quick to make you will surprise yourself. Enjoy!

Ingredients

 4 Medium red juicy tomatoes (the redder the better)
 1 Cucumber
 1 green bell pepper
 1 medium red onion
 ½ cup Greek pitted Kalamata olives (or more if you prefer)
 Ground sea salt and black pepper to taste
 4 tbsp quality extra virgin olive oil
 2 tbsp red wine vinegar
 1 cup vegan feta cubed or crumbed
 ½ tbsp quality dried oregano

Directions

Cut the tomatoes into wedges or large chunks.

Cut the cucumber in half length-wise, then slice into thick halves (at least 1/2″ in thickness)

Thinly slice the bell pepper into rings then into halves.

Cut the red onion in half and thinly slice into half-moons.

Place everything in a large salad dish or bowl Add a good handful of the pitted Kalamata olives.

Season with sea salt and cracked black pepper to taste. Pour over the olive oil, dried oregano, and red wine vinegar.

Give everything a very gentle toss to mix, try not to over mix.

Now add the feta on top.
Serve with your favorite crusty bread.
