Vegan Eton Mess
Vegan Eton Mess — well what’s not to love right! A big disastrous messy bowl of deliciousness. Juicy red berries, sweet crunchy meringues, and silky smooth coconut cream. This dessert is so easy to prepare and believe me when I say, it will be a complete crowd-pleaser for young and old and it’s completely vegan!! You can use store-bought meringues for this recipe but in my experience vegan meringues can be quite difficult to come across. So you may need to make your own — click here for the recipe. Super easy but a little time-consuming, so if you are making your own meringues to prepare your Eton mess for a dinner party or social occasion it might be easier to prepare them the morning or night before you need them. So then it’s just a matter of literally throwing all the ingredients into a bowl and serving. Whaaa…lah !!
Chop your strawberries and add them to a bowl with the sugar and balsamic vinegar. Stir gently to combine. Allow to sit for about 5 mins to allow the vinegar to draw out the strawberry juices.
Add the coconut cream to a large mixing bowl and whisk with an electric beater on high until it has doubled in size and becomes soft and fluffy.
Add the meringues to the bowl of cream while crunching them between your hands and breaking them up a little.
Add the strawberries (reserving a little to spoon on top when serving) gently mix to combine all the ingredients so the strawberries and the juices ripple through the cream.
Serve individually or in one “help yourself bowl” topped with the remaining strawberries and a big spoon. Soooooo good!
