Seeded Banana Bread

This Seeded Banana Bread is so easy to make... who ever originally came up with the idea of putting bananas into bread is a friggin genius. So moist, so sweet, and oh so tasty. The perfect comfort food. You will find yourself going back for more.

 

YIELDS 12 Servings

 

Ingredients

 

 200 g plain flour
 50 g ground almonds
 1 tsp sea salt
 1 tsp heaped teaspoon of baking powder
 1 tsp ground cinnamon
 100 g caster sugar
 1 chia egg (1 Tsp of ground chia seeds + 2 Tsp water mixed together)
 100 ml melted coconut oil
 4 med ripe bananas, mashed
 100 g mixed seeds ( pumpkin, seasame, linseed, hemp, sunflower )

 

Directions

Preheat oven to 180 deg./ 350 F/ gas mark 4.

Sift the flour, ground almonds, salt, baking powder and cinnamon into a bowl and stir in the sugar.

Mix in the chia egg and melted coconut oil.

Fold in the mixed seeds and mashed bananas.

Spoon into a lined loaf tin and bake for 50 – 60 mins, until the loaf is golden brown and springs back when gently touched with your finger.

Leave in the tin for 10 mins to cool, then turn out onto a wire rack to cool completely.

 

Enjoy with your favourite cuppa or pre-slice and freeze for the kids lunch boxes.
